Farfalle with Salmon



Life gets even better when my good friend Sue invites me to dinner as she is one fabulous cook.  A favorite dish she often makes is this quick pasta that has just a few ingredients.

In a large skillet, saute chopped onions in olive oil.
Add smoked salmon. Toss in capers.


Pour in cream.














Set the mood.













Add drained pasta.




Stir gently.
 
Sprinkle grated parmesan on top.

Serve.


Farfalle with Salmon

1 lb    farfalle (bowties) or pasta of your choice
1/4     cup olive oil
1        small yellow onion, chopped
1/4     lb smoked salmon, chopped
3        Tbls capers, drained
1        cup heavy cream
          parmesan, freshly grated
          ground black pepper

Cook pasta in salted boiling water per package directions.

In a large saute pan or skillet, saute chopped onion in olive oil over medium high heat.  Add chopped salmon and cook until fish is translucent.  Add drained capers.  Lower heat and add heavy cream.  Heat sauce thoroughly over low heat; do not allow sauce to boil.  Carefully add drained cooked pasta and stir gently to mix.  Season with pepper to taste.

Serve with grated parmesan.
