Five-Minute Fudge



It's true.

You can really make this fudge in 5 minutes.  It's foolproof and the results are, well, this smooth and rich  fudge will satisfy anyone's wild chocolate craving no matter what time of day or for any reason, certifiable or not. 



Line an 8"x8" pan with foil.  To do this easily, place foil over the outside of the pan, folding corners neatly.  Ease off the pan and place inside pan.  Lightly spray foil with a non-stick coating.

This simple recipe uses only 4 basic ingredients - chocolate chips, sweetened condensed milk, vanilla extract and salt.
In a large microwavable bowl, pour in chocolate chips on bottom and top with milk, vanilla extract and salt.
Microwave on high for 1 minute.  Stir to mix.  Return to microwave for 30 seconds.  Mix again.  The fudge is "done" when the chocolate chips melt when stirred.  Work quickly to mix vigorously as the fudge sets up quickly.  Mix in nuts if desired.
Plunk fudge into the prepared pan and smooth out.

When firm, cut fudge into 1" squares.


Five-Minute Fudge



3     cups chocolate chips of your choice (semi-sweet, milk, bittersweet or a combo)
1     can sweetened condensed milk (14 oz.)
1     tsp. vanilla extract
1     pinch salt
1     cup chopped nuts (optional)

Line an 8"x8" pan with foil and spray lighting with a non-stick.  In a large mixing bowl, add chocolate chips, condensed milk, vanilla extract, and salt in this order.  Microwave on high for 1 minute.  Stir to mix.  Microwave on high for 30 seconds.  If the chocolate chips are not melted when stirred, return to microwave for 15 seconds on high.  Stir again and repeat in microwave at 15 second intervals if needed.  When chips are melted, stir vigorously to combine all ingredients.  Work quickly as this fudge sets up fast.  Transfer fudge in prepared pan and smooth top.

Cover surface with plastic wrap and cool in refrigerator or at room temperature.  Keeps for about a week in an airtight container.
